This is the epitome of a perfect, herbaceous Hojiblanca olive oil. Its aroma is a fantastic blend of flowers and herbs, unripe peach, green almond, nectarine, fresh cut grass, and aromatic tarragon. Combined with tasting notes of green banana, apple, and star anise in flavor. This oil is very balanced and well-rounded. A healthy bitterness with notes of green tea, wild fennel, and fresh lettuce greens round out the complexity of the flavor profile. The finish is a classic warming black peppercorn that lingers beautifully. It tastes amazingly fresh.
